Winter blues-busting chickpea & veggie stew

This vegetarian stew has so much going for it. My mother-in-law, Lissu (an expert cook who I introduced in my chicken soup blog post), and I came up with this recipe yesterday.

It’s delicious and really warming. Cauliflower and kale are high on the antidepressant food list. Its high fiber content and spices, which promote good digestion, make it gut-healthy. And chickpeas are great plant-based protein. You can serve this alone or add over a whole grain of your choice and you’ve got a one pot meal. I suggest making a large enough batch for a couple of servings for your household and then freezing in glass containers for at least another serving, maybe even two over the next few weeks. And then it’ll be spring before we know it!
